Pumpkin Pecan Pie with Caramel Sauce

You have to try this amazing pie. I worked at a restaurant many years ago that served this during the holidays and people went crazy over it. I have served it at many events that I catered and people go insane after they eat it, well not completely crazy, you know what I mean. Food so good, that you almost forget where you are or what you are doing!

Pecan Pumpkin Pie and Caramel Sauce

**(this recipe is for TWO pies)**

1 29-ounce can pumpkin pie MIX

(Read the label carefully; buy pumpkin pie MIX NOT packed pumpkin)

1 5-ounce can evaporated milk

3 eggs, lightly beaten

1 Cup sugar

½ teaspoon salt

2 Teaspoon cinnamon

1 box of “Pillsbury Plus” yellow cake mix with pudding in the mix

½ pound butter, melted and cooled slightly

1-1/2 cups chopped pecans

Preheat oven to 350 degrees. Line two 9-inch pie pans (preferably glass) with parchment paper or waxed paper; just trace the pie dish onto the paper and cut out a circle to fit the bottom of the plate. Mix together Pumpkin, milk, sugar, eggs, salt and cinnamon. Spray pans with cooking spray and pour mixture into both pans. Sprinkle cake mix over the top of each. Distribute chopped pecans over cake mix and drizzle melted butter over all. Bake one hour. Chill-(preferably overnight). Before serving, let it come to room temperature- Score the edges of each pie a bit with a knife and invert onto a plate and remove waxed paper and cut into wedges. Top with a dollop of whipped cream, and warm caramel sauce drizzled over top. This is a delicious alternative to pumpkin pie and extremely easy to make. Do not be thrown off by the use of the packaged cake mix; it makes a delicious “crust” in this great version of the classic pumpkin pie.

Carmel Sauce

2 Sticks of sweet butter

3 Cups light brown sugar

1-cup heavy cream

Cut butter into pieces and melt it in a small heavy-bottomed pan. Stir in the brown sugar and cream. Cook over very low heat, stirring constantly, until all is melted and blended. Whisking the sauce helps to bring it together. Serve warm. Refrigerate what is not used-reheat on low heat.

Whipped Cream

2 cups heavy whipping cream

3 Tablespoons-powdered sugar

1-1/2 teaspoon vanilla

Whip cream in a medium bowl add sugar and vanilla any time after you first start whipping. Whip into soft peaks. Refrigerate till ready to use.

Curry Corn and Crab Hushpuppies

With Curried Honey-Mustard Dip

Ingredients

· 1 cup yellow cornmeal (not too coarse)
· ½ cup all-purpose flour
· ½ tsp baking powder
· ½ tsp baking soda
· ½ cup buttermilk
· 1 egg
· 2 tbsp melted, unsalted butter
· ¼ cup thinly sliced scallion greens
· ½ cup lightly cooked corn kernels (or raw)
· 1 cup crab meat
· canola oil for frying
· kosher salt
· freshly ground black pepper
· 1 teaspoon curry powder

How-to

1. In a bowl, mix the cornmeal, flour, baking soda and powder and curry powder

2. In a separate bowl mix the buttermilk, egg and melted butter. Stir the dry ingredients into the wet, being careful not to over mix

3. Gently fold the scallions, corn and crab into the batter, season with salt and pepper

4. Let the batter rest for 20 minutes before frying

5. Heat the canola oil in a pot or deep fryer to 350º. Drop spoonfuls of the batter into the oil, cooking until golden brown & delicious, about 3 minutes. Drain on paper towels and sprinkle lightly with salt

6. Serve immediately with Curry Honey Mustard Sauce

· ½ cup Creole mustard
· ½ cup of Mayonnaise
· ¼ cup of honey
· 1 teaspoon curry powder

I have served my fig Crostini at numerous events that I’ve catered…. it’s fig season now and I’m so excited. My favorite fruit!

Fig and Goat Cheese Crostini

Makes 24 hors d’oeuvres

Ingredients

1 baguette, sliced into 24 –(1/2 inch-thick) diagonally cut pieces

12 oz soft mild goat cheese at room temperature

1 bottle of balsamic glaze, usually at most gourmet stores

½ cup of toasted Pepitas (pumpkin seeds)

about 8 fresh ripe figs, cut into ¼ inch slices

¼ cup of Olive Oil

fresh salt and freshly ground black pepper

Preparation:
arrange cut baguette slices on baking sheet and brush tops lightly with oil. Bake in preheated *350 oven until lightly toasted and golden brown, about 7 to 10 minutes.
Cool.

Assemble Crostini:
Spread each toast with goat cheese, top with 1 or 2 slices of fig, depending on how big the slices are, sprinkle with salt and pepper, drizzle a little balsamic glaze and sprinkle with pumpkin seeds on top and ENJOY!

Roasted Chicken with Potatoes, Carrots, Onions and Bacon

Prep Time: 15 Minutes

Cook Time: 1 ½ to 2 hours

Ingredients

1 (5-6 pound) roasting chicken

6 small to medium russet potatoes or other potatoes you have on hand

1 large onion, cut into 1 inch slices and then cut into quarters

6 carrots, peeled and cut into thirds

1 lemon, halved

2 teaspoons chopped garlic

2 teaspoons of Herbs de Provence

Kosher Salt

Fresh ground pepper

1 tablespoon Worcestershire sauce

½ cup dry white wine

2 teaspoons paprika

4 to 6 slices of bacon

Directions:

Begin with preparing your ingredients by cutting your potatoes in half and then in half again. Peel and slice your onion into 1 inch thick slices and then into thirds. Peel your carrots and cut them in into thirds if they are skinny, if thick, cut in half lengthwise and then into 2 inch pieces. Then cut your lemon in half. Add your potatoes, onions, peeled carrots and 2 tablespoons of olive oil to a roasting pan. Season with salt, pepper, 1 teaspoon of the Herbs de Provence and 1 teaspoon of the paprika, toss together well and then add ½ cup of wine and the 1 tablespoon of Worcestershire sauce.

To prepare your chicken, remove the bag of giblets from the inside of your chicken. Thoroughly wash your chicken with water, inside and out. Then pat your chicken with a paper towel until completely dry. Generously season the inside of your chicken with salt and pepper. Season the outside with salt and pepper as well and sprinkle the remaining Herbs de Provence and Paprika on the outside of the chicken. Place the two lemon halves and the garlic inside the cavity of the chicken. Place chicken on top of the vegetables and wrap the bacon around each leg and two slices cross wise on top of the chicken, this will help baste the chicken as it cooks and add great flavor to the entire dish.

Bake at 425 degrees for 1 ½ hours to 2 hours or until an instant read thermometer reads 180* Fahrenheit. (Insert the thermometer in the inner thigh area near the breast of the bird, but not touching bone) Then remove from oven and cover with aluminum foil. Let your chicken sit for 15 minutes.

Watermelon Mint Feta Salad

· 1/2 cup chopped red onion

· 1/2 cup lime juice (4-6 limes, depending on how big and juicy the limes are)

· A quarter of a medium sized watermelon, rind removed, black seeds removed (if there are any), chopped into 1-inch cube-ish pieces, about 8 cups

· 1/2 cup crumbled feta cheese

· 1/2 cup fresh mint leaves, chopped

· 1/2 cup fresh parsley leaves, chopped

· ¼ cup chopped Kalamata Olives

Method

1 Soak the chopped red onion in the lime juice while you are prepping the other ingredients, about 15 minutes.

2 Gently combine all ingredients into a large serving bowl.

Serve immediately. Salad will get soggy if kept overnight.

Serves 6-8.

I serve this salad in Asian porcelain soup spoons as an appetizer; this serving suggestion would make approximately 24 spoons

Ingredients

· 1 package 8-inch bamboo skewers or smaller

· 1 pint cherry or grape tomatoes

· 2 (1 pound) tubs bocconcini (small balls of fresh mozzarella), drained

· 24 leaves fresh basil

· Extra-virgin olive oil, for drizzling

· Salt and pepper

· 2 Tablespoons of Balsamic glaze

Directions

For caprese sticks, skewer 1 tomato and 1 bocconcini bites, placing basil leaves between them. Drizzle these sticks with extra-virgin oil and balsamic glaze, season with salt and pepper, to your taste. Makes 24 skewers, so this would serve 8 with 3 skewers per person

Beefsteak Tomato Tart with Manchego Cheese & Basil

Servings: Serves 6

Ingredients

· 1 1/4 cups all-purpose flour

· 8 tablespoons (1 stick) unsalted butter , very cold, cut into 1/2-inch pieces

· 1/2 teaspoon salt

· 1 teaspoon sugar

· 2 to 3 tablespoons whole milk , very cold

· 1 1/2 pounds beefsteak tomatoes , sliced 1/4 inch thick

· 2 tablespoons olive oil

· 1 small onion , peeled and sliced into thin rings

· 1/2 cup heavy cream

· 2 Tablespoons fresh basil leaves, chopped

· 2 cloves garlic , minced

· 1 teaspoon kosher salt

· 1/2 teaspoon freshly ground black pepper

· 1 cup grated Manchego cheese (about 4 ounces)

Directions

To make crust: In a food processor with knife blade attached, combine flour, butter, salt and sugar. Pulse 6 to 8 times, just until mixture resembles coarse meal.

Add milk 1 Tbsp. at a time, pulsing as you go, until mixture forms a ball. Remove dough from processor and shape into a 5-inch disk. Wrap in plastic and refrigerate at least 1 hour (or wrap again in foil and freeze up to 6 weeks).
Preheat oven to 400°. On a floured board, allow dough to sit, unwrapped, until just pliable, about 15 minutes. With a floured rolling pin, roll dough into a large circle, moving it a quarter turn with every roll to make sure it's not sticking underneath (dough should be 1/4- to 1/8-inch thick.
Ease dough round into a 9-inch tart pan with a removable bottom. Press tightly into the sides of the pan (dough should exceed the edge by 1/2 inch). Using the rolling pin, cut excess dough against the tart pan to create a perfectly even edge. Chill 30 minutes before cooking.
With the tines of a fork, poke holes throughout the bottom of the crust. Cover with foil; top with pie weights or uncooked beans or rice. Bake 15 to 20 minutes, or until edge of crust is light golden. Remove crust from oven and carefully remove weights and foil. Return to oven to bake 5 to 10 minutes more. Cool on rack. Keep oven on at 400°.
To make filling: Meanwhile, place tomato slices on a paper-towel-lined surface and let sit 5 minutes, flipping once. In a large skillet, heat 1 Tbsp. olive oil over medium heat. Add onion and cook until golden brown, 7 to 12 minutes; transfer to a plate. Add remaining tablespoon olive oil to skillet and, in batches (careful not to crowd), sauté tomato slices until just golden, 2 to 3 minutes each side; transfer to plate with the onions. Add cream, basil, and garlic to the remaining juices; increase heat and cook until liquid is reduced by half. Season with salt and pepper; add 3/4 cup cheese. Stir to combine
Pour reduced liquid into prepared pie shell. Top with onions and tomatoes; sprinkle with remaining cheese. Cook until tart is hot and cheese is melted, 10 to 15 minutes.

Almond-Dried Cherry & Goat Cheese Stuffed Chicken Breasts with Cherry Port Braising Sauce

Cherry Port Braising Sauce

· 1 cup Port Wine

· 2 cups pitted fresh cherries or frozen pitted cherries

· 1 tablespoon Dijon-style mustard

· 2 tablespoons honey

· 1 stem of fresh rosemary

· 4 stems of fresh thyme

Combine all ingredients and bring mixture to a low boil for approximately 10 minutes and remove from heat and set a side to cool. Proceed to stuffing the chicken while the sauce cools

Almond-Dried Cherry & Goat Cheese Stuffed Chicken

Ingredients

· 4 boneless skinless chicken breasts

· 6 ounces goat cheese

· 1/4 cup coarsely chopped dried cherries

· 1/2 cup slivered almonds, divided

· 1 teaspoon orange zest

· 1/4 teaspoon kosher salt

· 1/8 teaspoon coarsely ground pepper

· 1/2 cup panko bread crumbs

· 1 large egg, lightly beaten

· 1 tablespoon olive oil

Directions

Flatten chicken between wax paper with flat side of meat mallet or rolling pin to an even thickness. Combine goat cheese, dried cherries, 1/4 cup slivered almonds and orange zest. Place 1/4 of mixture at one end of each chicken breast and roll, tucking in ends; sprinkle with salt and pepper. On a plate, combine remaining 1/4 cup chopped almonds and panko bread crumbs. Dip each breast in egg and roll all side in bread crumb mixture. Place in freezer for one hour. Heat oil in large ovenproof skillet over medium-high heat. Cook chicken until golden on all sides (about 6-8 minutes). Pour Cherry Port Braising Sauce over the chicken and place pan in preheated 375 F oven until chicken is no longer pink, juices run clear and temperature reaches 170 F on an instant-read thermometer (about 20 minutes).

Asian Style Shortribs with Wasabi Green Onion Mashed Potatoes, Sesame Lemon Asparagus

Catered a small, casual party the other night. This client recently moved back to the San Francisco Bay Area from China. It was up to me to make the menu....and to incorporate the steamed Chinese dumplings that his nanny made. So, I did not want to make a complete Chinese menu, since he had just moved here to the States from being in China for so many years and I had to inplement the dumplings. I came up with an American Classic dish of Beef Shortribs and I put an Asian twist to it with flavors of ginger, soy and lemongrass. It was a success and I will be making this dish again in the future! Asian Style Beef Shortribs with Fried Leeks & Kumquats, Wasabi & Green Onion Mashed Potatoes and Sauteed Sesame Lemon Asparagus. Believe it or not, this was the first time that I tasted a Kumquat and it was so wonderful, a great blend of sweet and sour and it complimented the flavors of the short ribs quite well.

It always brings me great pleasure to be able to help people entertain, but it brings me greater joy when a client calls me that I have not heard in a while. I feel flattered by the fact that I have repeat customers and I feel privileged that they want me to cater their affairs over and over again. I always feel right at home in anyone's kitchen, but I feel very comfortable in familiar surroundings that conjure up memories of joyous events from the past. Making new memories of great food and conversations with my client's and their party guests is something that I can draw upon and get inspired for more amazing parties that I can cater in the future.

The party that I did last night was a Spring Cocktail Party, eventhough it was pouring rain out and so very cold...I guess the Ground Hog did not see his shadow this year. Party guests rushed in from the cold rain to warm up to delicious Swedish Meatballs and Champagne. Other fabulous vittles on the menu included the hit of the night, Orange Tarragon Salmon served in Chinese Soup Spoons with a sinfully amazing Hollandaise drizzled over the top. I have always thought that their is a "guilty pleasure" from Hollandaise, don't feel too guilty about this one, it's a "small bite" and you don't eat it everyday...so enjoy it and savor every bite!

My client did her homework before I arrived that I didn't even ask her to do! She took her menu that she had decided on serving and brought it to her local wine sommeliers so she can get the best wine pairings for the food and it was a great success; we served a pinot gris and champagne with the menu. She had mentioned to me that it would be a great idea to suggest wine parings with my menus, which is something that I don't have. So, off to the wine sommeliers so I can learn more and give more to my clients; I guess my client gave me homework to do!

Catered a dinner party last night for new clients' Doug & Joelle in San Carlos. I always enjoy helping people entertain with good food and service. I always tell my clients that it's not just "their party", it's also mine, that's why I take so much care in the way the table looks and how the food tastes and looks. I cook food that I would eat, delicious and very tasteful. I am in my element while cooking in ones kitchen and making sure that all the food is preparred with care.
I loved all the courses that I did at this party, but I have to say, that I am glad that my client chose the "Dessert Sampler" plate for dessert, with 3 different delicious desserts...much better than just one, right? It's also a tug of war, because the main course was a bleu cheese encrusted bacon wrapped beef fillet with red wine sauce...yum! Spring Fever

It may seem too early to think about entertaining outdoors, but I’m getting Spring Fever! Here in California, especially the San Francisco Bay Area, it’s second nature-so to say, to entertain al fresco. Our weather here at least 8 months out of the year is perfect for a party setting in the sunshine. I have always enjoyed entertaining outdoors and I love to be able to help people do the same. There is something about the sunshine, light breeze and the birds singing in the background that contributes to the perfect celebratory ambiance. Most of the events that I cater are at private homes, so the parties are not too big to host in ones backyard or patio, plus entertaining at home is much more relaxing then having it at a public venue.

I find that whether the soiree is casual or formal, sit down or buffet style; my clients and their guests are at their most relaxed state enjoying the party in someone’s garden. Not to say that they are not enjoying the event if it was indoors, remember that you do need a back up plan during the spring or fall months in the bay area, sometimes we do get rain here. Here are some key points to remember when planning a garden party.

1. Lack of Shade-No fun in the Sweltering Sun: Depending on where you live, you may have a lack of shade at key times of the day, leaving your guests roast in the midday sun. So, please plan ahead and have plenty of umbrellas; you can rent them from your local party rental company, if you don’t have enough of them on hand.
2. Lighting: Depending on what time you are hosting your event, the sun does go down and you need to plan for that. There is nothing worse then tripping on obstacles in the backyard or not being able to see the food that you are eating. Turn on your backlights; make it fun, a simple change of a light bulb with different wattage or colors can add to the ambience. String up some lights everywhere, you can find boxes of large or small string lights at many larger department stores, if you don’t want to do that yourself, many rental companies can supply a lighting package for you that includes installation. One really great thing that I love, are the new L.E.D. battery operated candles, I like the larger pillar style ones, you can get them at very reasonable prices, I have found many at the big box stores and many discount retailers, they really do look like a real flickering candle, they are safe and they don’t blow out.
3. Man’s Best Friend, or Unruly Pets at the Party? No matter how well behaved your pets are, unexpected things can happen when you have a large group of people in your home whom your pets are not familiar with. Please either hire a pet sitter to take them out for a play date for several hours or for the whole day or night or have them comfortably restrained in another room of the house. Nothing is worse then a pet trying to get food off of the buffet table that I had just set up or someone’s pet inspecting everyone’s inseam; it has happened.
4. Insects Are Not Welcome Guests At Your Party: Take a few minutes to inspect your home and backyard the week before the party. Look especially for standing water, a source for mosquitoes, and for bee’s nests. If you do have a bee’s nest, call a beekeeper- most of them will remove the bee’s nest for free. Walk through the lawn and the perimeter of the house for anthills; some gentle insecticides (preferably organic) can make all the difference between a really fun party and ants crawling on your watermelon or worse…you!
5. Entertainment: Good food and fun friends mingling at your party is great entertainment, but for small parties when conversations tend to get low, there always seems to be that uncomfortable silence in the background sometimes. To avoid this, simply have some music on, turn the stereo on and angle the speakers facing outdoors from a back window or re wire the speakers with long wires, or some homes have outdoor speakers wired already. If you have it in your budget, hire a small band or a DJ, which will really get your party going. Please remember, simple is best, music in the background is always nice.
6. Last but not Least: Turn your sprinkle systems off the day before the party, walking on mushy landscapes or getting high heels stuck in the ground from damp lawns are not fun, nor are they fun for your Manolo Blahnik’s. Have plenty of ice on hand, usually when you have mixed drinks and ice to cool sodas, wine and beer you will need at least 2 lbs of ice per guest for any kind of outdoor party, store the ice in coolers or large plastic tubs…rental companies also have coolers that you can rent.

Catered a wonderful Birthday Party last night for new clients' Claire and her husband Don, it was his birthday celebration dinner party. We had planned an outdoor "BBQ/Picnic" feel for this party with the table outside. So with mother nature handing us 60 degree weather just days after we were sweltering in 102 degree weather, we had to move the table for 30 indoors, but it worked out great!

To enhance the feel of a picnic/bbq I used a classic red and white gingham patterned table cloth and I matched the servers with blue and white gingham shirts for their uniform. My design plan was a success giving a great summery picnic feel to the evening along with simple white roses on the tables and candles. The servers passed 4 delicious hor d'ouevres then seated salad, dinner and to top it off-birthday cake!

I still get inspired after doing hundreds of events over the years, I really enjoy it. We can get inspired together; just call me next time you want to host a party and YOU can be a guest at your next big bash!

Catered a wonderful birthday party for a new client in her beautiful Spanish style home in San Jose this past Saturday night. My friendly and courteous staff passed Hor D'Ouevres and some delectable appetizers were placed on two buffet tables adjacent to the patio through French doors. The weather was perfect, not too hot or cold... A fabulous garden party with little white lights dangling in the patio and smooth jazz playing in the background made for a perfect back drop to the event. The menu was a mix of sophisticated items and good old comfort food, like mini chicken pot pies...the perfect size for a hor d'ouevres. The chilled orange tarragon Salmon in "Spoons" with caper aioli was the big hit of the night, it was the perfect fresh and light little morsel for a summer night. More scrumptious items that were enjoyed by the party guests included, Mini BBQ Pork Sliders and Gazpacho Soup "Shots". Catered a "double birthday" party last night for my regular clients' Alex & Cathy in Los Altos last night. It was so fun...they had a terrific band set up near the pool, the outdoor fireplace was roaring and the party guests were dancing and eating good food. This makes for a recipe of good times and wonderful memories. I always get inspired by the party guests enjoying themselves. The menu above had 9 savory items and 3 dessert items, a big menu for a big birthday smash!

Catered a graduation party in Los Gatos over the weekend. My oh my, what it would be like to be young again! This is a great reason to celebrate in style! I catered my clients' daughter's graduation party a couple of years ago, this time it was her brothers' turn. This was a combo grad party and empty nest celebration for Doug and Joan! I ran into some other clients' of mine at this party, it was fun to chat and talk about entertaining and good food, two things that I know a bit about and I never tire of discussing about. It was a hot day but a bit of a breeze and all the umbrellas saved everyone from melting away. I love catering parties outdoors....

I catered a wonderful party in Atherton last night for my new clients' Kelly & David. The weather yesterday was a beautiful spring day, a perfect backdrop for this dinner party. Fantastic views into the garden from the elegantly set dining table would set the mood for the evening.

As guests arrived we served them cocktails and butler passed hor d'ouevres of a delicious Korean spiced Tuna Tartare on wonton with Edammame Wasabi puree and a flaky Artichoke Phyllo tartlet with a mixture of creamy ricotta cheese and Parmesan.

After guests were seated in the dining room, we served the first course of fresh Pea Tarragon soup topped with a Crab & Cheddar toast, followed by a salad of tender Butter lettuce dressed in a a Champagne Pear vinaigrette with grapefruit, avocado, goat cheese and sunflower seeds.

We temped the party guests enough with small morsels, so we then presented them with the main course of roasted Cornish game hen with wildflower honey & orange, buttermilk chive mashed red skinned potatoes, asparagus with balsamic glaze and shaved Parmigiano Reggiano. A sweet ending to a fantastic dinner party was a triple chocolate truffle cake with raspberry sauce, made with three different kinds of chocolate-it was rich, creamy and fudge like...YUM!

I always enjoy looking forward to catering my parties. I have catered many events for Peter and Cheri; and today's Easter Brunch was another successful event that I helped create. I enjoy clients' that feed my creativity with their optimism of what I LOVE to do! It really makes me want to try even harder. Boy, the weather was so different out here in the San Francisco Bay Area this Eater Holiday! Rain, wind and cold threatened the festivities, but that didn't stop the party guests today from enjoying a delicioius meal...in style, of course!

Holidays, especially Easter always bring back good memories from growing up. Special foods during the holidays were something I always looked forward too. My mother is a wonderful cook and I was always in ahh of her while she was in the kitchen when I was a little boy. I can remember, I was really young; say...like five years old and I begged her to help her out in the kitchen, no matter what it was. Licking a spoonful of cake batter or watching her create magic with her hands with lots of love with everything she touched. Cookies, Pasta or a bowl of soup...every meal was a gourmet show for me! Holiday ham was one of her specialities; I remember one year she made a ham that was enrobed with some type of pastry or something like it with a floral design on it. My mom was the Queen...according to me! The ham that I serve at my Easter catering parties may not be as special or unique as my mom's but everyone still enjoyed it! Cheers to you mom for always inspiring me to cook the best that I can for my client's and their guests!

Inspiration for me comes from many things, great clients, chefs on t.v., many good friends, but my mom inspired me to become what I am today...a great cook and someone that really enjoyes helping people entertain with an approach that is from the heart.

Delicious appetizers and champagne toasting the romantic Valentine's Day weekend for a great soiree of friends and family enthusiatically devouring up wonderful food. I had some new items on the menu that were very popular among the party guests, among them were the Goat Cheese Stuffed Endive Leaves with Mandarin Oranges, Pistachios and Balsamic Glaze and who wouldn't love the Spanish inspired "Paella" Sliders made with Shrimp, Chicken and Chorizo with Saffron Aioli. I have catered numerous events for this client and I really enjoy our relationship, combining our ideas-making all of the parties inspiring for me and their guests. My fabulous regular client called me needing help 48 hours before she needed me to help her entertain friends and associates after a school meeting on Thursday night. Of course, I was delighted to assist her with her entertaining needs!!! I love what I do and I really do enjoy sharing my skills with people that enjoy what I create. This was a simple affair at 8:30 with just a few Hor D'Ouevres, but simple does not mean it can't be beautiful! For the centerpiece, I carved out some sugar pumkins and a squash to use as a pillar candle holder, I thought they turned out wonderful; I also scattered some mini pumpkins and gourds and some preserved autumn leaves

Catered an office party this afternoon Palo Alto. We turned their conference room into a beautiful buffet of little bites, with an adjacent large balcony made for a perfect entertaining space on a sunny afternoon.

Had the delightful pleasure catering a special birthday party for Julie last night. My regular clients' Julie & her husband Ryan shared a warm July evening with friends and family. Disco music in the background made for a perfect evening, I was always a big fan of "Sister Sledge". Delicious appetizers, passed and buffet style to nibble on and cocktails served on the back patio was a perfect recipe for a festive birthday party celebration.

One of the highlights from the evening was a special birthday gift that I made for Julie, it was my Artichoke Topiary Tree with Lemon Parmesan Aioli. My mom taught me how to make this when I was about 12 years old, my parents owned a catering business when I was young, she has always been and is still my inspiration and my muse with cooking and entertaining.

Eventhough catering is hard work, I truly had a great time last night mingling with guests in between grilling and frying up good food! Another one of my clients' was there as well, Betsy, we were talking about good food, entertaining and my dreams of publishing my appetizer cook book soon. What a satisfying night for me to see everyone having a great time and to think that I was a big part of that...always puts a smile on my face.

Adding stones, pebbles or a frog to the vase to anchor the flowers is always a good idea.
